I have daily conversations with people telling me they’d like to move towards a more plant-based diet. Many people aren’t sure what that even means, while others are familiar with the term and concept, but haven’t figured out how to make swaps and move in that direction. Most everyone I talk with is looking for simple plant-based meal ideas.
So I made a quick video to share a few suggestions and my favorite plant-based breakfast, lunch, and dinner options. These are the meals that are on weekly rotation in our home because they are easy to make (I have two busy kiddos!), they taste really delicious and no one misses the meat, and they keep me full and satisfied from one meal to the next.
Remember that moving towards being more plant-based does NOT mean you need to go fully vegetarian or vegan.
All you should focus on when you’re just getting started is just how you can get MORE plant foods in your diet than you’re currently getting. So if you get no plant-based meals right now, shoot for one fully plant-based meal every week, like Meatless Monday. Or, switch out your daily breakfasts to plant-based, and keep the rest of your meals just how they are.
If you try to switch it all at once, you’ll likely either get frustrated or overwhelmed, and neither of those are good. It’s important to take small steps forward that are sustainable.
